Almond Blueberry Waffle




Makes about four 7″ waffles

2 eggs
1 1/2 cups almond flour
1 cup blueberries
1/3 cup milk of choice
1 T honey
1 t vanilla extract
1/2 t baking soda
1/2 t cinnamon
pinch of salt

Preheat waffle maker.  Combine all ingredients in blender and mix until smooth.  When the waffle maker is nice and hot, pour 1/3 c of batter into waffle iron. When waffles are golden brown (about 4-5 minutes), remove with fork or tongs. Repeat with remaining batter. Serve with maple syrup, raw honey or fresh fruit.
