Asian Stir Fry with Quinoa


This meal was inspired by Susan Gregory.  Our little girl surprised us again and ate this really well.  We had to pick out the onions and some other ingredients, but overall it was a home run.  I love how easy it was to make!

Asian Stir Fry with Quinoa
  • 2 T sesame oil
  • 2 inches ginger, minced
  • 1/2 onion, sliced
  • 2 cloves garlic, pressed
  • 1 head broccoli, chopped
  • 4 fistfuls of green beans, trimmed and chopped
  • 2 carrots, chopped
  • 1 cup corn
  • 1 1/2 cups cooked quinoa
  • 2 T tamari
  • ½ cup sliced almonds
  1. Dry roast almonds in large pan over medium heat. Cook until golden brown and fragrant. Remove and set aside.
  2. Add oil and stir in ginger, onion, garlic and cook for 2 -3 minutes.
  3. Add broccoli, green beans and carrots and cook for 7-10 minutes.
  4. Stir in remaining ingredients and cook for 5 minutes.
