Cauli-rice

Ingredients

1 large cauliflower
1/2 onion, diced
coconut oil
salt and pepper to taste

Directions

1.  Wash cauliflower and remove stems.  Break into florets and place in food processor.  Pulse until it looks like rice.  (I used a hand powered food chopper)

2.  Heat large pan over medium high.  Add coconut oil and coat pan.  Cook onion until translucent.  Stir in cauliflower and saute. Cover and cook until tender, about 5 minutes.
