Corn and Black Bean Salad


This recipe was super flavorful and even easier to assemble.   Thank you Susan Gregory!  Our whole family enjoyed this salad.  I will definitely be making this again, even when I’m not fasting.

Corn and Black Bean Salad
  • 1/3 cup sliced almonds
  • 1 bag (1 lb) of frozen corn
  • 1 lime
  • 2 T EVOO
  • 1 handful cilantro, chopped
  • 2 cans black beans, drained and rinsed
  • 1/2 head of red cabbage, shredded
  • 1 cup grape tomatoes
  • 1/2 cup minced red onion
  1. Dry roast almonds in large pan over medium heat. Cook until golden brown and fragrant. Remove and set aside.
  2. Pour bag of corn into pan and let it warm up, stirring occasionally.
  3. Combine lime juice, EVOO and cilantro in a large bowl. Add the remaining ingredients and mix thoroughly.
  4. Serve and enjoy!
