Homemade spinach pasta (gluten-free, vegan)

First time making homemade pasta today.  I have been wanting to make my own noodles with vegetables already incorporated in the pasta.  Why you may ask?  Because my little girl is still developing her taste buds and does not yet enjoy the texture of greens.

Many pasta recipes I found called for couple eggs with 4 additional yolks.  It seemed too resource-intensive, so I decided to make this vegan.

It came out slightly mushy.  Not sure if it’s because I overcooked it (I learned afterward that you should not cook fresh pasta longer than 2 minutes)  or if it’s the flaxseed meal.  Only one way to find out, which means I’ll be making pasta again this week.   Despite its mushiness, the flavor was still delicious.  My daughter didn’t complain.

1 cup almond flour
1 cup brown rice flour
1 cup tapioca flour (plus extra for dusting)
1/2 t Himalayan pink salt
2 T flaxseed meal
6 T water
1/4 cup water
Couple fistfuls of spinach


1.  In a large bowl, stir together dry ingredients.  Make a well in the center.

2.  In a small bowl or cup, combine flaxseed meal with 6 T water.  Let sit for 5 minutes.

3.  In a blender, mix 1/4 c water and spinach.  Pour spinach mixture with flaxseed mixture.  Mix well.

4.  Pour spinach/flaxseed mixture in the flour well, and slowly incorporate with fork until well blended.  If dough is too wet, add more flour.  If it is too dry, add more water gradually.  Use hands to form dough into a ball with uniform texture and color.   Cover with a towel and let rest for 10 minutes.

5.  Sprinkle tapioca flour onto large cutting board.  Divide dough into four pieces, set one aside and rewrap the rest in a towel so dough does not dry out.  Sprinkle with more tapioca flour and use a rolling pin to flatten the dough until you have desired thickness.  Slice pasta into strips with a knife or pizza cutter.

6.  Roll out remaining dough and cut into strips.

7.  Cook in boiling water 1-2  minutes.  Drain and toss with butter or favorite sauce.
