Organic BBQ Chicken Pizza

Inspired to make an organic version of CPK’s BBQ Chicken Pizza, I found this pizza recipe.  And using Bar-B-Que Sauce recipe as a guideline, I modified it with the ingredients I had on hand.  I ended up using about 1/2 cup of vinegar (the original calls for 1 tablespoon) because I kept adding some to the ketchup bottle to clean it out.  Next time, I’m going to make ketchup using fresh tomatoes.  For today, I’m glad the ketchup we had in the fridge for months is now in the recycling bin.  I’m happy with how it came out – tangy, sweet, delicious and pretty close to CPK.  We paired it with a giant cucumber salad – yum!

BBQ Sauce

  • 1/2 cup organic ketchup
  • 1/2 cup organic apple cider vinegar
  • 4 tbsp organic brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp organic blackstrap molasses
  • 1 tsp organic garlic powder

  • 2 paleo pizza crusts
  • 4 organic and free-range boneless, skinless chicken cutlets
  • 16 oz organic mozzarella cheese
  • half onion, diced
  • organic cilantro, chopped
  • organic olive oil

In small saucepan over medium heat, stir together the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, blackstrap molasses, and garlic powder.  Bring to simmer, then remove from heat and allow to cool.

Preheat oven to 375 degrees.   Place chicken in a glass baking dish and coat with BBQ sauce.  Bake for 20 to 25 minutes, or until chicken is done. Remove the chicken from oven, cut and dice, then set aside.

Increase oven temperature to 475 degrees.  Lay pizza crusts on baking sheets and drizzle with olive oil.  Spoon BBQ sauce on each crust and spread evenly.  Sprinkle mozzarella cheese. chicken and onion.  Bake for about 15 minutes, or until crust is golden brown.

Remove from oven and sprinkle cilantro.  Enjoy!
