Paleo Bechamel Sauce

Paleo Bechamel Sauce

Ingredients
4 T butter
1/4 c tapioca flour
3 c milk
salt to taste
pinch of freshly ground nutmeg

Directions
In a medium saucepan, melt the butter over medium low heat.  Stir in the flour until well blended.  Cook 1 minute.  Gradually whisk in the milk, stirring constantly until smooth.  Add salt and nutmeg.  Cook, stirring until the mixture comes to a simmer.  Pour over favorite noodles.
