4 Paleo Bread Recipes

Paleo Bread (adapted from Elanas Pantry)
This recipe was pretty easy, and I simplified some of the steps so I would not have as many dishes to clean up afterward.  I would make this again.

Ingredients
2 c almond meal
2 T coconut flour
1/4 c flaxseed meal
1/4 t sea salt
1/2 t baking soda
5 eggs
1 T coconut oil
1 T raw honey
1 T apple cider vinegar

Directions
1.  Preheat oven to 350 degrees F.
2.  Combine dry ingredients together in a large bowl.  Add eggs, coconut oil, honey and vinegar and stir well.
3.  Pour batter into greased loaf pan.
4.  Bake for 30 minutes and cool.

Grain-Free Bread (adapted from Against All Grain)
This one was complicated, even though I tried simplifying some of the steps.  The bread came out a bit darker than Danielle’s, but I think it’s due to making my own cashew butter.  It’s a bit spongy like a cake, but still good with some honey.

Ingredients
1 cup raw cashew pieces
4 large eggs, separated
1 T raw honey
2 1/2 t apple cider vinegar
1/4 c almond milk (I used coconut milk because it’s what I had)
1/4 c coconut flour
1 t baking soda
1/2 t sea salt

Directions

1.  Preheat oven to 300 degrees F.  Place a bowl or pan of water on the bottom rack.  Supposedly the steam helps create a crisp crust.
2.  Grease the sides and bottom of an 8.5×4.5 loaf pan.
3.  Add cashews in a food processor and process for couple minutes.  Scrape down sides and process few more minutes, until smooth and creamy.
4.  Add egg yolk, honey, vinegar and milk, and process for 30 seconds or so.
5.  Beat egg whites in separate bowl until peaks form.
6.  Add egg whites and dry ingredients to mixture, and process until smooth.
7.  Pour batter into loaf pan and bake for 45-50 minutes, until toothpick comes out clean.

Paleo Sandwich Bread (from Living Healthy with Chocolate)
This tasted more like bread, and I love the flaxseeds sprinkled on top.  It is pretty dense.

Ingredients
2 c almond flour
1/3 c + 1 T flaxseed meal
1/2 c arrowroot powder
1/2 t sea salt
1 t baking soda
6 T butter (or coconut oil)
4 eggs
1 t apple cider vinegar
1/2 cup Greek yogurt
1 t whole flaxseeds (to sprinkle on top)

Directions
1.  Preheat oven to 350 degrees F.
2.  Combine dry ingredients in a large bowl.
3.  Melt butter or coconut oil and let cool for 5 minutes.
4.  Combine butter, eggs, vinegar and yogurt together in a separate bowl.
5.  Then mix wet and dry ingredients.
6.  Pour batter into greased loaf pan and sprinkle with whole flaxseeds.
7.  Bake 25 minutes, until toothpick comes out clean.

Rosemary Bread Loaf (from Paleo Comfort Foods)
The rosemary does it for me.  Mmmm, mmm, mmm.  So good with a little butter and honey.

Ingredients
3 ½ c almond flour
¾ t baking soda
¼ t salt
4 large eggs
1 T honey
¾ t apple cider vinegar
3 t rosemary

Directions
Preheat oven to 300 degrees F.  Combine all the dry ingredients.  In a separate bowl, whisk the eggs, then add in the honey and apple cider vinegar.  Pour the batter into a well greased loaf pan.  Bake for 45 minutes or so, or until bread is golden brown and a wooden skewer comes out clean when inserted.
