Paleo chicken fingers

This recipe is adapted from Against All Grain.

Ingredients

1 lb chicken tenders
1/2 cup almond flour
1/2 t sea salt
fresh cracked pepper
1/2 t garlic powder
2 t mustard seed
1/4 cup EVOO
1 c unsweetened shredded coconut

Directions

1.  Mix all spices and almond flour in a bowl.

2.  Pour EVOO in second bowl.

3.   Add shredded coconut to third bowl.

4.  Preheat oven to 375 degrees F and grease baking sheet.  Dip each tender in the flour first, then dip in olive oil.  Lastly dip in the coconut shreds.

5.  Place chicken strips on baking sheet and bake for 10 minutes.  Turn chicken over and bake another 10 minutes.  Turn oven to broil and bake for 3 minutes.
