Paleo Chocolate Chip Walnut Cookies


This recipe was adapted from Danielle Walker’s Against All Grain

1/4 cup butter
1 egg at room temperature
6 pitted dates
2 t pure vanilla extract
1 1/2 c almond flour
2 T coconut flour
1/2 t baking soda
1/2 t sea salt
1/4 c dark chocolate pieces
1/4 c dark chocolate chips
1/4 c raw walnuts

1. Preheat oven to 350 degrees F.

2.  Place butter and egg in food processor and process for 15 seconds.

3.  Add the dates and vanilla extract, and process again until combined.

4.  Add the flours, baking soda, and salt, and process for 30 seconds.

5.  Scrape down the sides and pulse again if necessary.

6.  Stir the chocolate and walnuts by hand.

7.  Spoon balls of dough onto a greased baking sheet and lightly press them down to flatten.

8.  Bake for 15-18 minutes, until cookies are browned around the edges.
