Paleo Naan Bread

I got into a habit of buying frozen naan bread from Trader Joe’s.  It was light and not super carby like most breads.  So I decided to make a paleo version of naan bread and found a 3 ingredient recipe.  I didn’t have coconut milk, so I used regular milk and found the batter too runny and hard to flip.   Then I tried making it again with all equal parts, and it was the winner.  I’ve made it all week now, and my whole family loves it.

3/4 c almond flour
3/4 c tapioca flour
3/4 c milk

Combine all ingredients together in a bowl.   Heat a skillet over medium high heat and drizzle coconut oil.  Pour about 1/4 cup batter onto the pan and spread evenly.  Cook until bubbles form on top, then flip using a spatula.
