Raw vegan kimbap 김밥

This is a raw, vegan version of 김밥 rolls.  Nori sheets are rich in minerals such as calcium and iron.  Parsnips help build hemoglobin for healthy bones, nerves and blood vessels.  Recipe inspiration is from Crazy Sexy Kitchen by Kris Carr.

Ingredients

Root rice
2 cups peeled and chopped parsnips (or carrots, radish, beets, kohlrabi, jicama, cauliflower)
3/4 cup raw pine nuts
2-3 tbsp sesame oil
1/2 tsp black pepper
3 tbsp green onion
2 tbsp sesame seeds

nori sheets
sprouts
red bell pepper, julienned
shitake mushrooms, sliced
avocado
mint or cilantro leaves

Direction

1.  In food processor, pulse the parsnips, pine nuts, oils, black pepper, green onion and sesame seeds until mixture is like rice consistency.

2.  Place nori sheet on sushi mat. Spread “rice” mixture evenly on nori sheet.  Stack sprouts, bell pepper, shitake mushrooms in one long strip across center.

3.  Then roll up the mat starting at the edge closest to you and keep roll tight.
