Steel cut oats in a rice cooker





My daughter loves oatmeal.  Cooking steel cut oats is more work (than say eating cold cereal from a box) when you factor in the cook time, having to keep an eye on it while you cook, and cleaning the dishes afterward.  So I decided to see if I could simplify some steps and cook it in the rice cooker.  And guess what?  It was yummy!  It felt easier because I didn’t have to watch the oats as they cooked.


2 cups steel cut oats, washed and rinsed
2 cups water
Toppings of choice (peaches, strawberries, fresh roasted cashews, honey)


Add oats to the rice pot.  Wash and rinse the oats until the water is clear.  This may take 3 or 4 times of washing and rinsing.    Add 2 cups of water and wipe any excess water off the pot.  Insert pot inside the rice cooker and start cook.  When oats are cooked, scoop out some oatmeal and add your favorite toppings.  Enjoy!
