Thai chicken pizza (Paleo-ish)


Pizza dough
1 c almond flour
1 c brown rice flour
1 c tapioca flour
1 egg
1 c water

2 garlic cloves
1-2 inch ginger
5 T peanut butter
2 T honey
2 T vinegar
1 T soy

cooked chicken, cubed
1/4 c shredded carrots
1/4 c bean sprouts
several handfuls of mozzarella cheese
1/4 c peanuts

chopped cilantro and/or scallions


1.  Combine pizza dough ingredients in a medium bowl, or in a blender.  Pour over greased pizza pan or cookie sheet.  Bake at 350 for 10-15 minutes.

2.  While pizza dough is baking, mix together sauce ingredients in a small blender.  When pizza dough is lightly browned, remove from heat and spread sauce.

3.  Add toppings and bake another 10 minutes, until cheese is melted all ooey gooey.  Sprinkle garnish and enjoy!
