Thai Chicken

I got this recipe from Make Ahead Paleo, by Tammy Credicott.  The chicken is moist, tender and bursting with flavor. 

Ingredients
3-5 lbs of chicken legs or thighs, with skin
1/2 cup cilantro
2 cloves garlic
2 T fish sauce
1/4 cup lime juice
1/2 piece ginger
1 shallot
2 T EVOO
2 T coconut aminos
1 T honey
2 T coconut milk

Directions
1. Preheat oven to 375. Grease baking dish and place chicken.
2. Blend all ingredients together and pour over chicken.  Bake at 375 degrees for 30 minutes, then flip chicken, pouring sauce from pan and bake for 30 more minutes until browned and cooked through. Enjoy!
