Zucchini peanut sauce

Surprise, surprise, little girl does not like to eat most vegetables.  After some experimenting, I discovered she’ll eat them when they’re blended in smoothies or sauces.  Today, I made peanut sauce and added two zucchinis in the sauce.  Guess what, she ate zucchini’s in the sauce over sweet potato noodles aka dang myun 당면.

Ingredients:

2 zucchinis
1/2 cup coconut milk
couple cloves of garlic
1 inch ginger
1 T coconut aminos
1 lime, juice and zest
3 T apple cider vinegaar
2 T honey
Couple big scoops of peanut butter (the natural kind made with just peanuts and salt)

Mix everything in a blender until smooth and creamy.  Taste and adjust for seasoning.
